If there's anything more "precious" than the paradoxically universal obsession with locality, it's the notion that Washington, DC, has a local culinary tradition that can be universalized. Half smokes don't cut it. I'd rather the many wonderful chefs in this town take locally available/organic ingredients and let themselves be inspired by them according to their talents instead of creating nativistic contortions of half smokes and scrapple.
