Then I scanned yelp reviews for his name for the two above mentioned restaurants. His name comes up in a variety of reviews, and the commentators always love him. There were no reviews wherein his name was associated with bad service. The guy is simply great. If I were a restaurant operator I'd vacuum him up in a minute, and market him. The guy brings in business because his service is so exceptional.

For those particularly fond of Billy's terrific customer service he is currently working as a waiter at Old Ebbitt on lunch shifts (don't know the days).
A Billy update - I was happy to see him working in Clarendon again! He's working at Spirits of 76 (where the other staff have also been super friendly and provided great service) and Liberty Tavern.

The location in Short Pump in the Richmond area has closed. From The Richmond Times-Dispatch:
Quote"Matchbox is continuing its expansion within the region, including other locations in Northern Virginia, and made the difficult decision to close its Short Pump restaurant to keep the focus on current and new restaurants in the DMV," said Abby O'Shea, a spokesperson for the Matchbox.

The best thing they do is a free tasting and tour each Saturday, where they let you taste all of their 12 products and talk about them. Pretty close to 3 Stars if you want to make a day out of it.
The Sirene Amaro and Rhubarbo are my current favorite but they're honestly all delicious and so complex.
They're opening a new much bigger facility (and bar!) In Ivy City later this year.
