With (genuine) respect to José Andrés and all the good work he has done in his career, I don't think he's the best choice to be discussing the history of American cuisine.

I wanted to note that this talk was actually really good, I wish it had lasted much longer. And Jose actually had a lot of information about the history of American foods. I thought it was very good.
