naxos
Looking to buy some Dendè Oil or Palm Oil (synonyms) in northern VA or DC. Attempting to replicate a moqueca recipe.Any ideas where I can find it for sale?
lperry
I don't know where to find it, but I can tell you the secret to the unique dende taste. Cook your first meal, then leave the oil in the pan until the next meal. It gets more "dende-esque" with time.
Rieux
I use dende quite a bit for moqueca and bobí³. I used to buy it at the Brazilian Market in Wheaton, but they closed. Now you could try http://www.bybrazilmd.com/, which is also in Wheaton. The Best World and El Progreso markets in Mt. Pleasant also sometimes have it, but less frequently than the true Brazilian places. While you are there, it's worth it to pick up some Guaraní¡ and some Yoki Pí£o de Queijo mix. Fishinnards
In Arlington there is European Foods Import Export Inc at 2700 N. Pershing Drive "¢ Arlington, Virginia 22201 website: http://www.brazilianportuguesefood.com/ They carry Brazilian stuff so they may have palm oil. Also in Alexandria (West End near Duke and 395) there is Sierra International Foods 145 Duke St Ste CAlexandria, VA 22304. I think this is an African grocery so they may also have palm oil. I can't verify if either place actually carries palm oil, but maybe worth checking.

Smita Nordwall
There is an African market in the same shopping center as HeeBeen. I have seen palm oil there.
thistle
Bestway has palm oil, I remember when I was making soap, I had the hardest time finding palm oil that wasn't colored orange...
naxos
I was actually looking for the red stuff! It is apparently high in vitamin A which just might counterbalance the saturated fat. Whole Foods, surprisingly, carries it. Tonight is moqueca night .
thistle
I used the orange stuff, because I couldn't find plain palm oil (later found a source, & ordered in bulk), it made a lovely pinkish soap. I love living close to Bestway, I'm sure they have at least 2 types of palm oil-what sort of seafood are you going to use in your moqueca?
naxos
I used an old NYT recipe that called for mackerel, shrimp, scallops, mussels and crabmeat. Just finished eating- it was delicious!
thistle
That sounds wonderful- I would eat all of those, w/ or without dende, I love seafood, especially w/ lemon or lime, hope you had a lovely dinner....
naxos
Frankly, after tasting the dende before adding it to the stew, I am not sure how much flavor it added to the already delicious soup.
lperry
Frankly, after tasting the dende before adding it to the stew, I am not sure how much flavor it added to the already delicious soup. I wasn't joking about letting it sit for a day or so after using the first time. That really develops the flavor.

I forgot that step- but won't the next time- thank you for the reminder.
naxos
Now that I think about the recipe, it called got the palm oil to be added to the broth for a short simmer. I did not fry the veggies in it and I wonder if that made a difference in its lack of distinct flavor?
