NolaCaine
I went to Kobe Pho and had just that, chin. It was good but not great. The meat was nice and fatty but the broth was bland in my opinion. Spring rolls were good and interesting...appeared to have a hotdog in them and something crunchy. My son said "it's very red". We won't be back...even a 4 yr old knows good from bland pho.

The hot dog type thing could be "lap xuong" a dried Chinese sausage that is common in Vietnamese cuisine, most commonly found with sticky rice but is also in spring rolls sometimes. Also great in fried rice!

If this is the place I'm thinking of, it's the most expensive Pho I've ever seen (I'm not sure if it's priced like it was made with Kobe beef, or so that only Kobe Bryant can afford to eat there). The hot dog type thing could be "lap xuong" a dried Chinese sausage that is common in Vietnamese cuisine, most commonly found with sticky rice but is also in spring rolls sometimes. Also great in fried rice! Anytime you see a "Vietnamese hot dog that's 'very red,'" it's lap xuong. (Which reminds me: Watch Dead Weight if you get a moment (it starts at about the 43-minute mark)).
