DanCole42
wood vs gas? does firewood make better pizza, bbq bread? what resurants do you know that burn wood?American Flatbread in Ashburn fires their oven with oak. I forget their source, but it's somewhere in Loudon and the name/location is available at the restaurant. And yes, I believe it makes a better pizza. Beto
Ricciuti's in Olney uses wood in their oven. I like the char that the high temperature gives to the dough.

To get the best results from a woodburning unit (pizza oven, smoker etc) you need to use hardwood of a culinary quality. Oak, hickory, mesquite, apple, citrus all will have far different results. Firewood is a larger category that may include softer, more sappy woods like pine or others that add a resinous flavor to your foods: Retsina flavored BBQ is probably not what you are looking for. hillvalley
Copi's on U used to get their wood from New Morning Farm. All food from the kitchen comes out of the oven. Zero pizza in Bethesda has a wood burning oven as well.
