  1. Last night, I found 2 strip steaks in the freezer, so I defrosted and grilled with with zucchini spears and served with chimichurri sauce drizzled over the top. So tasty and so easy too.

  9. Made beef banana curry with rice for dinner after rejecting my husband's suggestion of banana chicken casserole. I can't remember the last time I made beef curry on the stove top prior to this, but it turned out delicious and I'll definitely make it again.

  11. I picked up 2 massive carrots and 1 zucchini to go with some chicken breasts that I defrosted. Cubed up the chicken, spiralized the veggies, and found 2 bell peppers to add as well. Stir fried it all up and tossed a quick sauce together of sweet rice wine, fish sauce, ginger, garlic and soy sauce. Tasted great and had enough leftovers for lunch and dinner today.

Picked up a spiralizer on Prime Day and put it to use the other night making this: http://meljoulwan.com/2011/07/16/cold-sesame-cucumber-noodles/ I used almond butter instead of sunbutter and soy sauce instead of coconut aminos and added some poached shredded chicken for some protein. Tasted great and really pleased with the performance of the spiralizer and the ease of clean-up afterwards.
  14. Digging in the freezer, found a venison roast a neighbor had given to us and it had gotten forgotten. Decided to give this recipe a try: http://www.activehipmomma.com/wisconsin-venison-roast-in-2-hours-instant-pot/. I didn't have a trivet, so I added more beef broth to submerge the roast a bit more and cook more evenly, and added a chopped onion to my chopped potatoes and carrots. Turned out really well.
  15. Made these for lunch: Thai Green Curry Samosa Wraps. I chose to leave the wraps uncut and wrapped in foil, they are perfect for tossing in your lunch bag to take to work. For a vegan meal, they are very filling and delicious.
  16. I've been making this the past couple of nights after cooking up some grilled chicken thighs this weekend: Grilled Pesto Chicken Flatbreads Super tasty and so easy for a weeknight meal.
  17. I do it for the entire week. Ie., make a batch Sunday night and eat it through Friday and it hasn't killed me yet. My fridge is pretty cool, so that might help and I store it towards the back.

  19. The past couple of weeks, I've been having bacon & egg salad on toast for breakfast. I fry up half a package of bacon while the Instant Pot takes care of hard-boiling 9 eggs. Let the eggs and bacon cool off, then peel the eggs, mash and mix with some mayo and mustard. Add the crumbled bacon, stir again and I've got delicious breakfast for the next week or more.
  20. Made this last night, but used an arm roast in stead of ground beef, as that's what we had lingering in the freezer. Turned out very well with the changes I noted below in parentheses. Grandpa’s Chili With Beans By Instant Pot Staff March 19, 2012 Submitted by Ed A. This recipe does not require soaking the beans beforehand so it is easy to throw together. I have used it at many barbecues with large crowds and it is always a favorite. Ingredients: 2 cups dry pinto beans 1 tablespoon chili powder 1 tablespoon Cumin Seed 2 cans diced green Chiles 1 Box of beef broth 1 14.5 oz. can diced tomato 1 small onion, diced 2 glove garlic, diced 2 lb course ground chuck (arm roast) For extra spiciness add canned diced jalepenos to your liking. (I used 1.5 chipotles in adobo) Instructions: Brown ground chuck and allow to caramelize. Deglaze pan with can of diced tomatoes. Don't drain the tomatoes before adding them. Add meat beans and all other ingredients in Instantpot and set for beans. I poured in enough broth to just cover the beans, then added the other ingredients. After first cycle in the beans setting check your seasonings then reset the Instantpot for the beans cycle again. Per the Instant Pot website, they approximate 25-30 min for dried pinto beans on the Manual setting. I did 38 min. and that was pretty much perfect.

I made Mexican rice last night in the Instant Pot. 3 cups long grain brown rice 1 can original Rotel 1 small white onion, peeled and quartered 1 TBS chopped garlic Chicken broth Rinse rice, pour into pot. Pour the Rotel into a food processor, add the onion and garlic, process till mostly smooth. Pour into a measuring cup. You will need at least 3 1/4 cups of liquid, so add chicken broth to the puree. Pour the mixture in with the rice. Seal the Instant Pot and set for Manual, 6 min. Once done, allow 14 min. to release pressure. Stir and eat. It was delicious with grilled steak.
  22. Felt like having jambalaya the other night, so made this recipe in the Instant Pot. Worked out pretty well, but next time I do want to remember to have an onion on hand, rather than fall back on minced dried onion. Whoops..
  23. Went through the pantry and found some simmer sauces that needed to be used up ASAP. So, the other night sauteed up some chicken breasts with some frozen mixed veggies that had been lurking for an undetermined amount of time and tossed with a butter chicken sauce, served over brown rice and called it done. Not every night is complicated, but it was reasonably tasty.
