  2. It is with an abiding sadness that I announce the closing of American Flatbread in Clarendon. The Ashburn location will remain open. Here are some excerpts from the email I received from the owner: So there you have it. At this point they're most concerned about their staff, so please do what you can to support them over the next week and give yourself a final taste of the best pizza in Clarendon. And then, if you'd like to try some of the best pizza in the area west of Orso, check out the Ashburn location!

My wife and I were enjoying some chain texmex fajitas last night, and somehow we ended up in a conversation with our waiter wherein he started talking about how much food the restaurant wastes: they're constantly throwing out tortillas, rice, etc. He became very serious and pointed out how terrible it is to waste food when there are so many people starving in the world. Now, I don't think anyone actually supports the wasting of food, or feels like it's unjust that people in the world go hungry every day, but it seems like an odd topic for a waiter to discuss while his patrons' mouths are stuffed with beefy tortillaed goodness. His service overall was fine, and it certainly didn't affect his tip, but it just seems like as a waiter you probably shouldn't make your patrons feel guilty about eating.
  8. We're trying to get a dinner together for some old business associates. We used to do the seafood buffet at the Mayflower, but apparently they don't do that anymore. Someone suggested the Old Ebbitt Grill, but.... meh. Does anyone have any thoughts for something suitable in the Dupont area with an OEG price and an OEG "safe food for everyone" menu?

  10. See below for my thoughts. Fair warning: I'm very, very biased. Final thoughts: "I can't do anything without pork." Love it. Also, I would much rather have seen RJ up against someone like Michael Symon.

  16. I'm trying to duplicate a particular preparation of potatoes au gratin. The potatoes are thinly sliced and almost meltingly tender (but firm enough to be sliced into squares). I think there might have been gruyere and/or parmesan in them. The distinguishing feature, though, was the crust. You see a lot of these kinds of dishes where the potatoes are kind of uneven, and the crust is dark brown in spots and white in others. The crust on this version, though, was completely even: mostly flat, and cooked to a perfect light gold all across and just slightly crunchy. It was also "removable": that is, you could take it off and just eat the crust. Any ideas how this was done? Egg? Cheese? Breadcrumbs? Broiler? No broiler? Par-cooked?
