Bialys

Went to NYC this weekend and picked up some bialys. Does anyone know of a bakery around here that sells them? I saw some (not particularly good) at Whole Foods a few months ago, but haven't seen them since.

They usually have them at the Georgetown Bagelry on River Road in Bethesda, and they're decent. I don't know if they have them at their location at 32nd and M.

Calvert Woodley Liquors (Connecticut and Windom Street, NW) sells them. However, never having tried one, I can't vouch for their authenticity.

Chutzpah Deli (http://www.chutzpahdeli.com) in Fairfax has 'em; Schiffman's Bagel Buddies & New York Deli in Fairfax has 'em; it wouldn't surprise me if Brooklyn Bagel in Clarendon or So's Your Mom in Adams Morgan has 'em.

I suspect most, if not all, of these would just be ones imported from New York, like from Kossar's (http://www.kossarsbialys.com/bialy%20making.htm).

If you are a bialy fanatic, you might be interested in reading a book about the origins of the bagel alternative. _The Bialy Eaters_ by Mimi Sheraton is fascinating. Her search took her to Poland, Russia and Argentina and the Lower East Side, of course.

It's a great read... and please report back, if you find a bialy you like in DC! I bring them back from trips to NY or to visit my grandmother in Florida...

I've gotten good bialys at Sniders Foods on Seminary Ave, just of Georgia Ave in Silver Spring. It's probably 1/2 - 1 mile South of the Forest Glen (red line) Metro stop. I'm not sure where they get them from. The bagles they have are very good also.

Izzy's Bagels on Rockville Pike, Previously Manhatten Bagels (same owners) has bialys that are probably the best for this area.

After a recent trip up to NY, I believe that the difference is in the water. I don't know why but even if everything else were the exact same the water makes a difference.

How are the bagels there?  Is it in the same little strip as Blinds to Go and Vegetable Garden?

That is the place. Definitely as close to NY style as you can get.

I do admit I could be a little jaded since I have been going there for years. The staff is extremely nice and courteous. That alone says a lot these days. They have pictures of kids eating bagels on the walls and one of those pictures is of my older daughter when she was about two.

A fresh bagel is soft, chewy and perfect.  Toasting destroys the texture.

If one toasts the halves separately (as most people and most delis do), the interior is ruined, I completely agree. It seems to me that degree-of-crustiness is a matter of preference; after all, a fresh bagel last leaves the oven, not the boiler. In any case, there's a better way to toast a bagel, if one likes theirs warm and not microwaved.

I slice them, then lightly toast the whole bagel keeping both halves together. The interior stays moist and chewy, the exterior picks up just a bit of crunch, and the whole assembly is warm. Works even better if you choose bagels that are a tad on the light-colored side to begin with. Made a huge difference in my enjoyment of bagels when somebody showed me this trick...give it a try!

See my note above. The ones I got from the Alexandria store weren't bad, just not NYC good. (not enough onion for me personally). Without a trip to NYC, those have to satisfy my bialy hunger.

I bought bialys from Bagel City in Rockville a couple of weeks ago. I called ahead, and they didn't have any already made but they baked some for me (minimum order of a dozen - they said it could be ready in about 20 minutes so they must be baking frozen or already made bialys). I don't know how they compare to others in the area or in NY. The bialy was somewhat chewy and crusty, and there was alot of minced onion in the middle, with poppy seeds mixed in. The onion wasn't completely soft.

With so many threads about bagel stores, a bagel thread, and a proposed blind bagel taste test, there really should be a thread about the cousins of bagels-- bialy's -- and specifically about bialy's in DC.

So I checked on Google. Admittedly Google is not DR.com and has none of the expertise one can find here.

Regardless google has a surprising suggestion with regard to the best place for bialy's in DC:

There is a bialy thread already here but on the shopping and cooking forum. Nonetheless, the 19 posts there do include plenty of referrals to places (including Georgetown Bagelry, which I love but didn't realize they did bialys) that serve (versus just sell to take hom) bialys.

Not sure if this thread and that one should be combined.

Really? Most Americans have never heard of a bialy. It never got the promotion and associated market awareness that bagels did in this country.

I'll suggest another experiment depending on your curiosity level about this. Phone 10 bagel shops, chains and independents, in Maryland, Delaware, Ohio, PA, etc. Just none in NY/NJ/CT nor areas with high concentration of eastern european and jewish residents. I'd be surprised if even 4 had bialys regularly.

I know that Goldberg's, Bagel City and Ize's, my regular stops, all have bialys. Honestly, though, I don't understand the appeal as much. They skip the boiling step, and instead of a hole, you make an indent and fill it with the topping (onion, salt, poppy, etc.) instead of sprinkling over the whole crust.

Not sure about Georgetown Bagelry or Bethesda Bagels.

They skip the boiling step, and instead of a hole, you make an indent and fill it with the topping (onion, salt, poppy, etc.) instead of sprinkling over the whole crust.

Not sure about Georgetown Bagelry or Bethesda Bagels.

Think you or The Hersh educated us recently (think in the Deli thread maybe) that your area/MoCo has a very high density of Jewish residents. If you meant to say you can't imagine a bagel shop without bagels in MoCo, that'd make more sense. ;)

I was born in Philly, moved to Ft. Lauderdale, went to GW, and settled in MoCo. I've always been around my peeps. :-)

I did say *good* bagel shop. I was specifically discounting chains, and places that make "rolls with a hole."

They have them at Georgetown. It's silly to compare a bagel and a bialy. They are different things. It's like complaining that an English muffin does not have hole and is not boiled.

Calvert Woodley usually carry bialys, shipped in from where ever they get their bagels from. They use to claim H&H, but not sure if that is still the case.

CW gets frozen H&H bagels and cooks them in store. I have never had fresh H&H, but the CW version is not the stuff of legends.

A couple of weeks ago I actually got a batch still warm out of the oven and the bagel was good. Otherwise they tend to get stale and dense fairly quickly.

Bialys and bagels - it's like comparing apples to oranges. Bialys, in my opinion, should always be toasted (like an English muffin), whereas a good, fresh bagel doesn't need to be.

Let's not forget bulkas and pletzels, either!

Strong agreement with all of the above. Except, tragically, the bit about bialys always benefiting from toasting. Que horror! Have you never had a fresh hot bialy straight from the oven of someone that knew what (s)he was doing? I'm guessing no or you might not feel that way. ;)

I live around the corner from Kossar's, and often buy bialys fresh out of their ovens. Then I take them home and toast them, as I prefer dough that's cooked all the way through.

I can confirm that the Annandale-Fairfax Einstein Bros. Bagels does not have bialys.

However, you said "good," so this in no way dispels your thought (refer to Rolls with Holes).

It's pretty scary that there's a www.RollsWithHoles.com (coming soon) - not sure if I want to stick around long enough to find out what it's going to be. Bagels? Porn? Bagel Porn?
