I think I may be taking today off.

One of the mixed blessings of being a good cook is that much is expected of you.

I kept it pretty simple on Christmas day. My daughter volunteered to help me cook!

Breakfast:

Scottish oatmeal cooked with coconut milk, spices, fresh quince and dried fruit

soft-boiled farm eggs

Atwater sunflower-flax toast

Peet's cappuccino (x4)

I have no idea what you made -- nor do I care -- but that picture is nothing but pure food porn! Dah-um! I need a cigarette.

In the early years of Chez Panisse, we had a meal there which included a slice of a whole suckling pig which had been boned out and stuffed with forcemeat and then roasted. It was displayed, natch, in the dining room as we entered for our seating. While I have never done that with pork, I have made ballotines of poultry, and I can attest that it is a lot of work. Really spectacular to look at and eat, however.

On a more rustic note, our dinner last night was:

mixed green salad with lemon vinaigrette

lasagna with crimini duxelles and mozzarella di bufala

(Yum! Thanks for the great idea, Zora!)

I'm glad I was able to help!

Yesterday, assuming I'd be feeding dinner to Veggie-teen and Veggie-bf, I made a vegetarian soup with the calypso beans I'd bought from Sunnyside Organics Farm at the Dupont market--a thick hearty pot with a lot of mirepoix and aromatic herbs, some porcini powder, leftover collard greens, tomatoes, cumin, balsamico and aleppo pepper. Turns out they had made other plans, so I added some diced Christmas ham to our bowls, made some garlic toast and called it a satisfying dinner. Drank Victory Weizen Bock.

-Parsnips, turnips, carrots, leeks, some other root vegetable that's escaping me right now, pearl onions, rosemary, butter

-NY strip with porcini powder crust*, porcini oil, and fresh lemon juice

-Wegman's 7-grain loaf

-Vosges Bacon Chocolate bar for dessert

*Dried porcinis, black pepper, cloves, and coriander

I tried the steak with some roquefort - didn't go. But MAN was it good.

2004 Montepulciano d'Abruzzo from Cantina Zaccagnini - My wife calls this "stick wine" because it has a little piece of vine tied to it. That's why we bought it (what, you've never bought a wine because you thought the label looked cool?). A fantastic wine for the price - velvety, dark red fruit. We bought some to take up for Christmas only to find that my parents already had several bottles and also loved it. My mother, apparently, also calls it stick wine.

cornbread

chili with leftover rib roast (I used your suggestion, too, Zora :D), salt pork, pork sausage, and good mother stallard beans

Something was off in the flavor of the chili as I was checking it during cooking, and I suspect it was from the can of tomato puree I used. I'm not sure how old the can was, but the chili had a sharp acidic taste that sugar and cinnamon did nothing to neutralize. The canned taste was noticeable too. I thought the pork sausage would help, and it did a bit. Finally, near the end of the cooking time, I threw in a chunk of butter :P. That worked. It smoothed the flavor of the chiii out, but it still had a nice kick from the chiles on the finish. (I used dried red hatch chiles and chile powder I brought back from NM in the fall, plus some fresh jalapenos and serranos.)

We thought about perhaps making a last-minute ressy to eat out last night, but what with the cold, and the wind, I made dinner instead.

Flank steak with caramelized pearl onions, oven-roasted rosemary potatoes, sauteed mushrooms with thyme over white bean puree and brussel sprouts with lemon and bacon.

In between some quickie Trader Joe's meals, I have made a few notable dishes over the past week or so:

"Schnitzel with noodles"--chicken schnitzel with a stovetop mac 'n cheese (both with a good mustardy tang). Yum.

Chicken soup with lemon and orzo--tasted even better after sitting for a day or two, so the flavors could really mingle.

Bacon chipotle twice-baked potatoes--a little too spicy for my liking, but a really zingy side dish. The chicken that went with it was an epic fail, though.

mixed green salad with feta

green chile cheeseburgers on sesame buns

tagliatelle with sherry vinegar sauce

The cheeseburgers turned out fantastic. I thawed some of the roasted Hatch green chiles I brought back from my NM trip this fall and used them. Hot :P.

osso bucco with gremolata

risotto (Violone Nanno)

brussels sprouts with lemon

2000 Chateau Laroque St. Emilion

"Best osso bucco you've ever made" -- We were both out and I asked him to turn off the oven when he got back to the house before me, at around 4. He forgot and left the oven on until 5. So the pot was braising at 270 f. for four hours. No harm done, apparently.

Salt-grilled yellowtail

Sendai yukina no ohitashi: parboiled yukina (the Sendai variety of a kind of rape or turnip green), cooled and seasoned with soy sauce and katsuobushi (shaved bonito flakes)

More of the okowa. It was a gift that came as a big frozen block in a gallon-size freezer bag, so methinks we'll be eating okowa for a while.

Olive oil rosemary bread

Black-eyed pea salad

Lamb and split pea soup

I had braised some lamb neck bones in the crockpot and used that stock and meat in the soup. The peas were from a pack of yellow and green split peas from Trader Joe's, and I loosely followed the recipe from that package, substituting the lamb stock for chicken stock and also scaling back the size of the recipe a bit. I had used quite a bit of rosemary in the braise so did not add the rosemary the soup recipe called for. Otherwise, it had bacon, onions, carrot, and garlic. It came out really well.

Pan-seared scallop atop a bed of turnip greens (Farm at Sunnyside) with bacon bits (Calhoun's) in puree of sunchoke (Next Step) soup that was made a wee bit creamier with mascarpone. Sopped up with ciabatta from Grape + Bean (Rest. Eve).
You take pretty pictures. :P

Pan roasted chicken with winter spices, fresh lemon juice, and pear two ways:

1) Bosc pears braised in deglazed chicken pan with white wine, honey, and butter

2) Fresh toasted almonds cold-steeped in D'anjou pear juice, which was then strained and poured on the hot chicken

Filet mignon with wild mushroom crust and braised fennel with roquefort and herbs, topped off with fresh lemon juice, herbs, and porcini oil:
