  3. Maybe they were mouth ground and they were going for the coffee version of Kuchikami no sake. The first sake, kuchikami no sake, (口噛みの酒) or "mouth-chewed sake," was made by people chewing rice, chestnuts, millet, and acorns and spitting the mixture into a tub, where the enzymes from saliva converted the starches to sugar. This sweet mixture was then combined with freshly cooked grain and allowed to naturally ferment. From the New World Encylopedia
  4. Glad everything was great. Good Talking with you. And Happy Birthday. If I had known we could have given you a delicious Green Whoopie Pie! (sorry one day only
  5. Michael Altenberg passed on Saturday morning. http://articles.chic...bistro-campagne Michael was an important guy in local-substainable-harmonious-whatever movement in Chicago. Not just for the sake of being able to say he did, but in a beautiful selection of classic preparations straight from Escoffier. He didn't bring a lot of attention to himself however, and thusly flew under the radar. A great friend of mine has been at Bistro Campagne for years and I am thankful he introduced me to Michael many years ago.
  6. One thing that needs to be stated is this - The restaurants for the most point want to industrially provide everyone. There is no evil intent to pick and choose specific guests. But with limited space (Daily at Citizen and Komi; Friday and Saturday nights at Grapeseed, et. al.) everyone can't be provided for. When we take a reservation for a prime time, many people call looking for that same spot and it doesn't exist. Then, when that reso cancels, we are disappointed and everyone who called for that same space and was denied is disappointed in some way as well. The tone here seems to be that restaurants would rather keep people away out of spite than fill a table. it is more that we feel bad for all of the people who were trying to be industrially provided for and would have honored the reservation. But short of the idea of the rating system for guests outlned above the first caller/no show-ers will continue to screw the subsequent callers.
  7. I doubt Citzen's contract has words or a tone that implies "deadbeat". But rest assured, they do exist. Contracts are aimed at them. we had a Friday night a few weeks ago where 32% of the reservations either no showed or cancelled after 5 pm. Asking for servers or tables, returning wine, discounts for snotty servers, discounts for being next to a drunk are already happening. As for fire alarms, I believe that is on a case by case basis
  8. Thanks for the kind words. We started fixing up the outside of the space to make it better represent what goes on inside. This was planned from the beginning, but got put off due to some county permitting crapola. We are just putting up cedar shakes up by the roof and siding the rest of the front. Also fixing up the deck and a few more cosmetic details. I was trying to put a kick ass tin roof over the deck, the county wouldn't allow it. Apparently, everyone would burst into flames or something if they ate in the shade on our deck. Go Figure. This should be done by March 15th and we are open for business throughout. Our prices have moved around a bit as the products have. Craft beer never seems to get cheaper. Lobster price goes up and down, and will get cheaper when Maine reopens very, very soon. Right now it is mostly Canada for lobster and apparently the Canadians know they don't have much competition from the south. Their prices show that. Thanks again, Jeff
  9. If you are or if you know some Good Cooks that want to work in Bethesda making everything from scratch, and occassionally getting slammed so bad you kind of spin around in circles, send me your resume. I will pay you to work. if you suck and don't actually want to work, but want to just stand around AT work, then don't send me your resume. I don't want to pay you. If you think you can be in charge of a bunch of people who work, but still do work yourself, let me know too, I might want you as well. Again, if you want to actually work, and use your brain and hands as well as your mouth I need some good people, and will pay them to work. Do a good job and I will pay you more. send resume to: freddyslobster@gmail.com Jeff Freddy's Lobster and Clams
  10. Due to a wonderful coincidence, divine act, perfect storm, kismet or whatever today represents two very important Holidays for Freddy's. It is both National Cabbage Day and National Indian Pudding Day National Indian Pudding Day is, of course, also celebrated November 13th. Some things are so important to our national psyche they require two celebrations. National Cabbage Day was established, probably in the mid 18th century, to honor the proud cabbages that gave their lives in the production of slaws, krauts, bubbles and squeaks, golumpkis, and kim chees throughout history. Truly, few foods can measure up to the importance of the humble cabbage. Having sprung from the tears of Lycurgus, King of the Edonians, cabbage has always been held in high regard since Emporer Claudius had the Roman senate debate whether there was a better dish than Corned Beef and Cabbage ( of course they voted No). Captain Cook even had his doctors use it as a compress to ward off gangrene. Its hangover reducing qualities are legendary, and we all know babies come from cabbage patches. So, let's honor this tasty vegetable, Hoist a red or green beauty, enjoy a Napa or savoy, wolf down the Choy of your choice. Rejoice it's Cabbage Day. Similarly, National Indian Pudding Day was established to honor the Native Americans who died in the perfection of pudding. Long simmered with molasses, cornmeal and spices Indian Pudding soothes and satisfies like no other contempory pudding. Generally considered by the pudding cognocenti to be one of the preeminent puddings available to the public. (PM me for a current list of permission only puddings). Ever since molasses rose from being a sweetener for cattle silage on the farm to a sweetener fit for human consumption, Indain Pudding has been a staple in every true American's diet, if not a center of the plate star. On this Highest of holy days make it your star. I do however, HATE it when people put raisins in it! Please join us at Freddys today as we celebrate this most special of days. Today only...mention National Cabbage day and we will Super Size your Cole Slaw order...Mention National Indian Pudding Day and we will upgrade you from Whipped Cream to Ice Cream on top. Servers with authentic Durgin Park attitude available, please call in advance. Or live large and do both.

  12. $66<$70 however But yes that deal is always around. Bloomspot makes you come up with three deals, so in order to keep from having to juggle 36 different deals, we kept one pretty similar. cheers
  13. the Poutine started at 5:30 pm on Saturday night. I am surprised the searchlights (I really love when people stil use them) and Oompah band didn't catch your attention.
  14. The mad scientists in the kitchen at Freddy's have stumbled across something truly special and announce the unveiling of: Lobster Poutine (Waffle Fries, Lobster Gravy and Fontina) This new dish tastes great but is certainly Not Recommended by the American Heart Association You really should share it
  15. New shell lobsters could definitely be that cheap, unfortunately you can probably expect only an ounce and a half to two ounces of meat per pound of live lobster.
  16. We've had Grilled Romaine on the menu at Grapeseed since 2000. I put it on because, well, I like grilled lettuce. Took it off for awhile and the customer led uprising (occupying) demanded it back. If you are not ready for the texture it might not work for you.
  17. so, did you take him up on the offer, or what?
  18. FWIW - Starting tomorrow we will be honoring the New York Yankees World Series run by replacing our Rhode Island Clear Chowder with Manahattan Clam Chowder. I realize Boston's collapse had nothing to do with Rhode Island, other than the fact that many of the Sox played for Pawtucket, and that the Yankees play in the Bronx, but this just seems fitting. I also understand that New York is not part of New England, but people from New England have been called Yankees forever (I saw it on Wikipedia). Come at lunch we are closed for an event Friday night. Taste of Bethesda Saturday, we aren't participating except by being open and having Happy Hour start at noon.
