  1. Yu Xiang Pork Szechuan Style has way too high a veg:meat ratio (carrots! snow peas! water chesnuts! mushrooms!) and the flavor is not that great. I'm sweating bullets writing this....it's not even all that spicy, but something about it has me crazy overheated. The "Ma La Wonton" necessary to get my order over the $15 delivery minimum are doughy and....well, doughy. Disappointing, since the Ma La Belly had me thinking this was going to become my go-to delivery place in my 'hood. However, the 8 minutes from call to delivery is a definite plus for the days when I can't walk the two blocks (today it's because I'm brewing).
  2. Shoulder meat is cut up into chunks and put into a cure that contains some green herbs, pepper, salt, pink salt, garlic and shallot. After 24 hours in the cure, chunks are submerged in fat and the whole lot brought to a simmer. Pop the uncovered pan in the oven for ~4 hours and remove to cool. To serve, head the fat up so it's no longer solid, remove pieces and cook in whichever manner you prefer for optimimum crispiness (these will be going on kebabs with chunks of organ meat to be grilled). I use the recipe from Ruhlman and Polcyns's Charcuterie. PM if you want the detailed recipe (as pink salt amounts should definitely not be eyeballed).
  3. I like loin confit, but it's hardly a quick preparation.
  4. The great thing about charcuterie is that you can get involved to whatever level you want. As for me, I'm confit-ing a pork shoulder tomorrow and cooking up some marinated pig organs on thursday.
  5. This mentions late this year or early next year. I haven't walked by that Olsson's in a while, but I would guess that the early next year estimate is a bit more realistic.
  6. Victory Golden Monkey - um, it's not british, it's american. And it's not even an english-style brew, it's a belgian tripel. do your research, man. Salopian Entire Butt Porter - hey, if people order it just for the name, at least they're ordering a delicious, unusual beer.
  7. There is no bar, correct, but if you're comfortable sitting at a two-top by yourself for a few hours, I don't see any reason why they wouldn't be able to accomodate a single diner. Give 'em a call.

  10. Yea turns out I can't make it, so I'd be in favor of one of those tuesdays in november (would election day be too much?). The 11th would work too.
  11. Totally forgot about cooking implements. Would the camp stove be sufficient to fry up a couple pounds of bacon? Anybody else bringing something that would work?

After a night of stuffing sausage and cleaning up the apartment, a Modified Negroni: 3 parts Genevieve, 3 parts Carpano Antica, 1 part Campari You get the Genevieve character more than I'd expected, especially in the nose, but I'm not sure that 1) it works that well in the cocktail (although the sweetness helps balance out even the reduced campari bitterness) and 2) I wouldn't rather just be drinking Genevieve straight with a rock or two.
  15. This place has become our go-to sandwich joint in the area. The panini are pretty good (I really dug a P11 today).
  16. 12 taps. If one of them wasn't Bell's Two-hearted, I mightve just left rather than getting a beer and waiting for my friends. The other 11: miserable. But the rolling rock cans are $1.75 on Saturdays, which is interesting to poor college kids. I guess.
  17. Am I the only one that gets really annoyed when event details are posted in both the event thread and the restaurant thread?
  18. When we have this, the Domino's Tracker, the 7-election site, and what I'm sure are countless other product/election mashups, I humbly propose doing away with the voting booth. Good consumers (and all good Americans consume, dammit) will just choose our next great leader with their wallets.
