  1. If you enjoy the reek of aging salamis, as I do, you will enjoy the aroma of this store. Gorgeous.

Kentucky-style barbecue (shoulders, smoked, mopped, chopped, dressed), Lancashire hotpot (this year with no browning and no stock), and racks given a few hours repose in de-alcoholized Dolin rouge then fast-and-loose sous-vided a la Kenji http://www.seriouseats.com/2010/04/the-food-lab-perfect-rack-of-lamb.html Plus mustard greens cooked in pork stock with andouille, tasso-cranberry goop, a couple bread dressings, green beans, salad, etc etc etc.
  3. A Yelp reviewer posted on December 23rd that LB has closed due to a landlord-tenant issue. Can anyone who lives closer to Falls Church than me please verify? Halalco is a very good alternative (my annual New Years lamb-fest is nigh), but this is sad news. I mean the butcher, that moved to a small building up on Hillwood after the fire. Just drove by, and it's open!
  4. I like Fentiman's, but only sans gin. Fever Tree (there is also a Fever Tree lower-sugar version that is nice) works best for me. Teardrop Lounge in Portland does bottle-refermented tonic water. It is transcendent.
  5. I once saw a guy in South Africa sear once side of a steak on the grill, then dip both sides on a plate dashed full of Ango, then grill the other side (and I think bring it back to the first side briefly). Was pretty damn good.
  6. Simmering proto-gumbo, thickened with leftover Thanksgiving gravy (which is just roux and stock and yummy meat bits anyway) and okra. Proto-gumbo, in that it'll get frozen off in its non-seafooded form (there's pork belly, veal, chicken, andouille, and tasso in it now, plus the usual starting materials), to be seafooded just before service...which'll probably be around New Years.
  7. Here it is, your moment of zen: Breakfast at Honey Pig. No, not an all-out, slough-up grilled spicy pork belly feed. Their kimchi-jjigae is as good or better than any other in the area I've tasted. Particularly of the ones available at 6am. They seem genuinely happy to see you (Annandale location, at least), the bahnchan are plentiful, and the stew is outstanding. If you're there before 7am, the Channel 4 morning news is playing, at a gentle volume. 3G coverage is good enough to read the paper or whatever, and the required slow eating of the boiling-hot (and spicy) stew is comforting, soothing, and relaxing. And even with a 30% tip, change back from a tenner.
  8. Re the Steak and Cheese--it's a great sandwich. I do suggest you allow yours to cool for a few minutes before chomping down, as the combination very hot (but not overcooked) beef and molten cheese makes it hard to appreciate the quality of the sandwich.

  11. While we're at it, could someone please remind me how much roux is required to thicken a certain amount of liquid into gravy?
  12. We just finished getting our carpet replaced by Clawes (~1900 sq ft). My parents had recommended them, and the entire process was professional and easy. They showed us all the schematics from their measurements, and were very clever in maximizing usage of rolls. They brought a team of 3 yesterday morning, and despite losing one to injury, moved all the furniture, ripped out, installed, and moved the furniture again, well within a day's work. Their pricing for equivalent-quality carpet was $4-$6/yd lower than other providers we priced, and we can have no complaints about the service. The showroom on Braddock Rd in Fairfax is staffed by Clawes family members, and the sales staff were friendly, not pushy, and answered all of our technical questions. Website here. Jake Parrott
  13. Speaking of Minervois, look out for the Domaine des Homs "Paul" bottling, imported by Williams Corner Wine (who are based in Charlottesville). All crunchy, gravelly, lip-smacking fruit. Not mouth-coating--it leaves plenty of room for, y'know, food 'n' stuff.
