  1. Gascogne (French white, grenache blanc I think, some ugni blanc and Colombard as well). Jade Mt. Mouvedre. Sorry I couldn't welcome youse, but when Moms gets married you have to show up.
  2. OK. Wabeck is going to a wedding tomorrow. But Wabeck will get some wine sorted out.
  3. Wabeck is going to the Zoo. But Wabeck will get some wine sorted out.
  4. Chassagne Montrachet, J.N. Gagnard, 1er cru "Clos de la Maltroye," 1999. Payroll is made much easier.
  5. Gin (Citadelle is my choice) in the freezer, small bottles of Schweppes, big ice cubes, serve in a big-ass wine glass (as not to warm up the beverage with your hand), lots of limes.
  6. This is pretty inaccurate. G+T made properly is a perfect cocktail. Jose Andres (no slouch himself) taught me how to make them, and I will say I am pretty much a disciple. I'd hardly call myself boring.
  7. Do I need a hall pass to take a leak now?
  8. Chef; What's the best dish you've ever had, and if not from your hand, what's the best dish you've created? Do you see a danger in the avant-garde, that young chefs learn to make red wine air before fond de veau? Thanks for your time, I look forward to seeing you soon.
  9. The Hotel George is managed by Kimpton (as is Poste/Monaco and Firefly/Hotel Madera), but Bistro Bis is Jeff Buben's deal. Just happens to share a roof.
  10. Charlie, don't walk into my kitchen, 'cause I'll be pissed off. Yeah we made it the last two years. We didn't this year, I'll still sleep well. But lots of deserving places did. I think Citronelle is the only one to make it all three years. I for one can't bitch about that. Who can bitch about Eve being so close to 4? And yes I have beef with some, but it'll take a of booze to get that out of me. 40 or so places, mostly (in my opinion) worthy. What else can you ask for? It's so easy to slag off someone than to do it yourself. Or to sell used cars.
  11. Any e-gullet vets remember the wine clip train wreck?
  12. Our 21 and 22 year olds seem to know what they're doing, Charlie. Pretty sure they do at Komi too.
