  1. Not to self promote but we have grilled baby rock octopus on our menu with a white bean ragout comprised of path valley white beans, smoked bacon and Serrano ham, mirepoix and smoked paprika. We pick up the beans with clam stock and throw in a few clams then butter and parsley to finish, octo on top and some good olive oil. I personally love the dish, my sous came with it.

  3. The issue with ground Kobe beef is that it's always frozen, and when you freeze beef, especially ground you lose all the unctuous ness and creamy fattiness that fresh has. Freezing the beef affects the proteins and the moisture content of the meat, even more so with the fattier Kobe, which is why when you go to cook it the fat renders right out and your left with this bland dry crap wondering why you spent the extra money. Id go angus all day.

My dad swears by this recipe, and no one in the family doesn't love it. .5 lb ground beef .5 lb pork sage sausage 1 medium onion chopped 2 clove garlic minced 1 pint tomatoes( hopefully home canned) 1 can red kidney beans 3/4 cup tomato juice 1 4oz can chopped green chilis( old El Paso) 1 tbsp Worcestershire 2 tsp paprika( not the fancy smoked stuff) 1 tsp sugar 1 tsp salt 1 tsp dried oregano 1/2 tsp ground cumin 1/4 tsp celery salt 1/4 tsp cayenne 1/4 tsp black pepper 1/8 tsp dry mustard Couple drops Tabasco Just fry the meat and onion, drain fat add everything else and simmer for a bit, then let cool and reheat before you eat it. Soo much better that way. We grew up on this recipe and still do. We make chili nachos chili fries or just a bowl. Sometimes if we're at the farm and its like 6 degrees or something we add a little peanut butter to keep us going strong outside.
  5. So when I went it was still called chamelon cafe, but the nice stemware had been replaced by tumblers and the menu felt like something you might make as a school project. And the food felt miles apart for what I remember. I assumed it was a bad night and vowed to return. Upon looking up the website again I found it was now Maggie's farm, and that they were in transition.
  6. Chamelon cafe is no more, this is bullshit. And I'm sorry if I'm not allowed to curse on here but it's now called Maggie's farm and has completely revamped the menu. Last time I went I thought they maybe just had an off night and was totally forgiving. I loved loved loved this place, the techniques used and classic French style fed my soul. Now it seems they're just trying to be some trendy place in a hipster filled neighborhood. I've gladly dropped 75 bucks a person here. Not anymore. This is very upsetting to me.
  7. I love toucan taco! I'm sorry I keep raving about laurel dive restaurants, but those are my favorite kind, I own one suit and I'm tired of wearing it out. Toucan taco is like old El Paso taco night at your parents house. In the best way possible. Sadly they are closed Sunday and Monday, which are my days off. However I still just make it some nights after working all day. Always puts a smile on m face. I am so happy that laurel has all these little gems I keep finding. Was a bit worried when I decided to set up roots here. Anyway I enjoy the crunchy tacos and the sunken burrito. Always awesome.
  8. Right now I am sitting at taqueria la vercruzana, in front of me is one of the most delicious plates of chicken enchiladas in salsa verde I have ever had. The tortillas are made in house I'm fairly certain, or bought from someone who does. The chicken is perfectly braised and the green sauce is spicy enough to have you ordering another cantaloupe juice. The mole poblano chicken is a leg and thigh that I don't think I could cook better myself, everyone who dislikes chicken probably hasn't had it cooked properly. The mole is very flavorful and comes with rice and beans, as does the meat and potato filled chili relleno, which I have ordered both times I've been here. There are only 9 tables, and they're rocking as I'm sitting here enjoying myself. I see the older reviews are mostly about the tacos, please come here to enjoy the plated food. I promise you won't be sorry, they have been in business 10 years strong, and are a wonderful bunch. I am smitten.
  9. I take offense!! I'm Baltimore born and raised and that's just how we do it. One if my favorite dishes at sushi ko is the salmon ceviche, the salmon roe and yuzu dressing with the salmon is outstanding.
  10. I went to ris after an event we did at the ritz, the gruner on the list was outstanding. And all of the food was excellent, standout was a massive plate of fried shrimp with chilis and a spicy mayo. But all in all this place rocks, and ris is such a sweet lady.
  11. The mussels dish is def for mussel lovers, I thought it awesome, the potato dumpling had sort of a Korean rice stick texture. Anyway I'm pretty sure they must make a broth out of mussels, reduce it and cook more mussels in it, I found it heady and rich. Only complaint, coulda have 2 more bites.
  12. I myself would love to have the time to eat here soon, will is a beast in the kitchen. We cooked together in New York and if that was any indication of his skill set I'm all over it.
  13. This is my go to Chinese, I will drive out of my way to eat here. In fact as I write this I am munching on cold basil chicken. They have the two menu system so you can order the good ol stand byes such as egg rolls and shrimp toast but then they have the Chinese menu, from there my favorite stand outs are the Dan Dan noodles, the Thai fish and the salt and pepper pork chops. This place is so worth the drive from anywhere it's not even funny. The food is on point. Little Asian dude chef rocking it out with the rest of his fam working the place. Please go and eat, take friends too cuz the portions are most def meant for sharing.
  14. So had my dinner last night, man it was awesome. First I'll say this; never ever have I been to a restaurant where the wines by the glass list was given so much love. My lady got a sav. Blanc and I'm thinking why would you ever order that wine? Turns out if was fantastic, from Uruguay. My AlbariƱo was yeasty and delicious. All the food was awesome, with the guinea hen being tops for me, crispy skin, perfect meat and all kinds of other goodies on the plate. Congrats guys and I hope the best for the future.
  15. I've had a cream cheese bagel only once out, at a dunkin doughnuts on route 1. There was so much cream cheese I was put off. Ended up throwing the mess away. I think it traumatized me because ive never paid for another. So if your looking for an over the top amount of cream cheese on the cheap, probably yer best bet. --- Bethesda Bagels (New Foodie)
  16. The best I've ever had in dc was at central, everything else was off but the tartare was awesome, brinoise fried potato, a mustard seed dressing and some gaufrette as well. Pretty awesome.
  17. This deeply saddens me. All of us out there grew up with something favorite from hostess, and now it's going to be all gone. Some of my go to goodies are those yellow cupcakes and the ho ho's. I guess little Debbie is going to rock it now. And I already checked, they are not publicly traded.
  18. Can you even buy sweetbreads in a grocery store? I know butcher shops basically don't exist anymore. I'm pretty sure a non industry person could attempt to buy them from maybe an Amish farm, does Bev sell them Sundays? Sorry to rant but this thread made me wonder if they are available retail. We get them from marcho farms through fells point. And even for us they can have spotty availability

  20. Ha, you bet! And they put the pricier ones right there. Thanks to everyone for the encouragement on the house, Becky brought home a meatball sub the other day and while it was no litteris but it was solid. It is a pretty awful looking little strip mall, brings to mind Alberto's trattoria in glen burnie, same strip mall with dark windows and you walk in they have tuxedoed waiters and a dessert cart.
  21. 2 weeks ago I bought my first house with my lady, we scored 4 acres and a 160 yr old farm house in laurel, desperate for something delicious to eat after the long days cleaning and unpacking we did some research and decided on pasta plus. What a great place. Very tasty pasta and their sauces are tops. I ordered veal scallopinis with a lemon butter and she got tagietelle with butter and sage and some mushrooms, mine came with a side of some red sauce noodles. Every dish was spot on as far as texture and seasoning and all aspects. For dessert we got the Marsala custard over berries, rivaled 2 Amy's. I have to say this place is impressive, we went back for wood fired pizza a few days after and it was amazing too. I think the cooks here do a stellar job and I tell you what, I'd buy each and everyone of them a cold beer just to say thanks for helping me not starve before poist came out to hook up our propane.
